CAS 4911 - Internship in How Food Works in the Community

• Students will be able explain the impact of community level non-profit food initiatives such as Community Food Initiatives, Live Healthy Appalachia and Rural Action.
• Students will be able to describe and explain the phases of the food system from production, distribution, consumption, and composting.
• Students will be able to describe how local food processing facilities such as grain mills and dairies operate.
• Students will be able to describe the challenges faced by local diversified agricultural producers in Southeast Ohio.
• Students will be able to describe the complexity of food and socio-cultural identity issues and the perception of food choices.
• Students will be able to explain how food can be an engine for entrepreneurship and local economic development.
• Students will be able to identify the problems faced by food insecurity organizations like food pantries and food banks.
• Students will be able to connect internship experience and academic knowledge gained in their major fields.
• Students will be able to transfer the skills, abilities, theories, or methodologies to effectively carry out their internship duties.
• Students will be able to communicate about their internship experience using realia, writing, and oral and audio-visual presentation modes.
• Students will be able to reflect upon their internship, assess their performance, and identify their strengths and weaknesses.
