Requisites: Permission required and C or better in RHT 1330

Learning Outcomes:
- Demonstrate basic recipe extension and recipe costing.
- Develop and understanding of proper care of equipment, safety and food sanitation.
- Identify and utilize various foods and forms of food to produce recipes.
- Understand and demonstrate the methods of food preparation and retention of desirable food characteristics.
