CAS 2410 - The Principles and Practice of Food Justice
This course introduces students to the principles and practice of food justice. The course explores the intersections of social, racial, and economic justice and nutrition and food security. Barriers to food access and food sovereignty are also investigated. Food Justice explores strategies to create a more sustainable, just, and equitable food system. Poverty, ownership and control of land, the rights of farmworkers and food service laborers, and the agroecological impacts of food production are some of the issues that impact food justice discussed in the course. By participating in food focused activities like food drives, food bank and pantry work, and community meals, students will put food justice principles into practice.

Learning Outcomes:
- Students will be able to describe the cultural norms of southeast Ohio communities and their attitudes towards food using historical, geographic, linguistic, agricultural, and culinary perspectives.
- Students will be able to describe the service and volunteer opportunities in the community for individuals and groups to redress food related challenges.
- Students will be able to outline the role of non-profits, religious organizations, and public institutions in addressing crises in food in our area.
- Students will be able to compare and contrast definitions of food security in urban and rural environments using different disciplinary perspectives.
- Students will be able to analyze the impact of food quality on the economy, environment, and individual health from a multi-disciplinary perspective.
- Students will be able to enumerate the challenges of food insecurity and access in our area.
- Students will be able to reflect on their food insecurity service experiences and assess their abilities to perform in voluntary organizations.
- Students will be able to communicate their research findings and experiences about food justice and food insecurity through written, spoken, and audio-visual presentation modes.
